Shredded Carrot Salad
This salad is spicy, crunchy, fresh, crisp and addicting. Adding protein like grilled tofu, beef or chicken would make it a meal.
1 pound freshly peeled & grated carrots (approx 7-8)
1 bunch radishes, grated
1 bunch green onion, sliced thinly
1 bunch baby bok choy, thinly sliced
¼ cup rice vinegar
3 tablespoons soy sauce
2 tablespoons toasted sesame oil
2 teaspoons sriracha (spicy chili) sauce (or to taste)
2 teaspoons sweet chili sauce
1 tablespoon toasted sesame seeds.
Whisk together vinegar, soy, sesame oil, sriracha and sweet chili sauce. Add the shredded carrots and radishes and green onions. Toss with spicy vinaigrette and sprinkle with sesame seeds.
*This salad is great fresh, but also quite delicious after it marinates for a few hours or overnight.
