Homemade Granola

Something healthy for you and your family to make and eat together!

Homemade Granola

This recipe is what I gave away as my edible Christmas gift this year.  You can add it to cereal, yogurt, pancake mix or muffin mix….and its healthy to boot!

 

2 sticks unsalted butter 

2 cups steel cut oats or old fashioned oatmeal (not instant)

1 cup spelt berries (found in bulk section)

¼ cup whole flax seeds

¼ cup wheat germ

¼ cup whole hazelnuts, rough chopped (or any other nut you like)

½ cup dried cherries, chopped

½ cup unsweetened whole coconut flakes

¼ - ½ cup honey

¼ - ½ cup brown sugar

2 Pinches of kosher salt


Preheat oven to 300 degrees.

 

In a large skillet over medium/high heat, melt butter. First add the oats, spelt berries, and flax seeds, and mix to coat with butter. Keep stirring with a wooden spoon until the flavors smell nutty, about 5 minutes.  

Next add wheat germ, chopped hazelnuts, dried cherries and coconut flake. Drizzle and mix in honey, brown sugar and salt.

 

Mix until everything is evenly coated with butter and spread out onto a baking sheet.

 

Put granola into the oven and bake for 30 minutes. Make sure to toss granola a few times during the baking process, the edges will brown quickly.

 

Once cooked, take granola out of the oven, let cool slightly and crack out of pan.
