Chicken Pozole Recipe

There are varying levels of complexity when making pozole. For a weeknight meal, you can purchase a pre-roasted chicken, chicken stock and canned hominy and have a delicious meal in 30 minutes. For a deeper, more complex flavor, roast your own chicken, make stock and use dried hominy, then let it stew for hours until the kernels are just right. Here is the in-between version…

Ingredients:
5 lb chicken, cut up into quarters
1 large white onion, diced
4 garlic cloves, minced
1/2 teaspoon ground cumin
1 teaspoon kosher salt
4 quarts chicken stock (low sodium, organic)
1 (14 oz) can diced chilies
1 (29 oz) can hominy, drained
Juice of 1 lime (or more to taste)
Green hot sauce to taste
Fresh cracked pepper

Garnishes: thinly sliced radish, sliced green onions, microgreens, chopped cilantro, chopped avocado, sliced cabbage, salsa verde, hot sauce or sriracha for kick! 

In a large stockpot, cover chicken with stock and bring to a boil. Simmer for 30-40 minutes. Once the chicken is cooked, remove from stock, let cool and remove the meat from the bones, shredding into bite sized pieces.
 
In a separate dutch oven, sauté garlic and onion until translucent. Add cumin and salt.

Next add diced chilies and hominy. Pour in hot chicken stock and add the shredded chicken and simmer for 30 minutes.

Before serving, add the lime juice and garnish as you wish. I think this dish is best with a little lick of spice!

*Dried hominy is an even better alternative, but you must remember to soak overnight. Questions?  Email me at chefschu@gmail.com.
