Technique Series: Roasted Garlic

This versatile ingredient is a chefs’ scented candle. I love the way my house smells when whole garlic bulbs are softening in flavor and texture in my oven. They can be mashed into a paste and layered into roasted vegetables, mashed potatoes, pasta dishes, soups, salad dressings or Asian inspired dishes. The uses are endless, get creative!  

*Garlic is also known to boost the body’s ability to fight colds!

Ingredients:
1-2 whole bulbs of garlic
2 T Olive oil, to drizzle

Technique:
Preheat oven to 400 degrees.
Slice very tops of garlic bulbs off to expose the cloves inside.
Place all of it in a pouch of tin foil.
Drizzle all the garlic with olive oil and gently close the pouch.
Bake for 55 minutes, opening the pouch for the last 5 minutes.
Once cool, you can squeeze the soft cloves out of the skin.
