Chocolate Pear Cake

Makes 10 Servings

The presentation alone is worth the effort. Beauty is in the slice.  This show stopper will be a nice addition to your table for the holidays. Not a bad breakfast cake either, if you ask me…

3 Bartlett pears
2 cups water
2 T juice from an orange
1 (2”) knob ginger, sliced  
¼ cup sugar
1 cinnamon stick
1 2/3 cup flour
¾ cup brown sugar
1/3 cup cocoa powder
1 tsp baking powder
1 tsp cinnamon
½ tsp baking soda
½ tsp kosher salt
1 egg
1 tsp vanilla extract
1 cup buttermilk
½ cup olive oil
3 oz. white chocolate, chopped

  1. Peel pears and slice in half. Dig out the core with a spoon. 
  2. In a large saucepan, combine water, sugar, orange juice, ginger and a cinnamon stick. Bring to a boil, until sugar is dissolved. Add pears and simmer for 25 minutes.
  3. Preheat oven to 350 degrees. Grease a loaf pan and set aside. Mix flour, brown sugar, cocoa, baking powder, cinnamon, baking soda, and salt. In a separate bowl whisk egg, vanilla, buttermilk, and oil. Add to flour mixture. If it seems too thick, add 1-2 Tablespoons cold water.
  4. Pour batter into prepared pan. Place pears, steam side up into the center of batter. The batter will not cover the pears, but will rise as it bakes.
  5. Bake 50-55 minutes. Cool on a rack.
  6. In a small bowl, place white chocolate and microwave it for 1-2 minutes, stirring every 30 seconds. Drizzle over cake.
